I'd say just go for an aggressive tread, not a size increase. Fairly small narrow tires can kick it pretty well.

It'll be on dropped spindles.

With the regular tires dropped spindles will be enough to get rid of the wheel gap and that's it.

The white might be a bit too bright. Dark green/light green, or dark green/off white would be my 2 choices.
